Greens Lime Cheesecake Bites
Following a plant based diet doesn't mean you miss out on traditional recipes. With some little tweaks you too can enjoy these luscious and creamy cheesecake bites. You'll love the introduction of vanilla here it works perfectly with the citrus, sweet flavour profile.

Ingredients for the base
2 cups vegan biscuits (example Leda brand arrowroot biscuits)
4 Tbsp coconut oil or coconut butter
Ingredients for the cheesecake layer
1 cup plant based or vegan condensed milk
1 cup coconut cream
1 tsp vanilla essence
1/4 cup maple syrup
3 tsp coconut or raw sugar
1/2 cup lime juice
1/2 tsp lime zest
Ingredients for the Greens layer
1 sachet of @coconutgreens
1 cup warm water
2 tsp agar agar (this is a vegan substitute for gelatin)
1 sachet green vegan jelly ( optional )
Mix together the agar agar with coconut greens and the warm water, add in the maple syrup and set the jelly in a tray in the freezer
To assemble the cheesecake ~
crush the vegan biscuits with the coconut oil or coconut butter and add to the base of a cake tin.
In a bowl add in the plant based condensed milk along with the coconut cream, vanilla essence, maple syrup, coconut sugar, lime juice, lime zest and set in the freezer for 3-4 hours !
Once the cheesecake is set add the jelly layer to the top and set again for 2-3 hours in the freezer.
Once the cheesecake is set add more greens powder to the top and shredded coconut plus fresh mint and cut into bite sized pieces.
