🥄 INGREDIENTS:

½ cup almond flour

4 Tbsp maple syrup

2 tsp Coconut Greens powder

2 tsp vegan butter or coconut oil

1 tsp vanilla extract

A pinch of cinnamon

¼ cup dark chocolate chips

¼ cup plant milk

2 tsp desiccated coconut flakes

2 tsp fresh mint leaves

 

🧁 METHOD:

  1. In a small bowl, mix almond flour, maple syrup, Coconut Greens powder, vegan butter, vanilla, cinnamon, and choc chips until smooth.

  2. Crush mint leaves with 2 tsp of plant milk in a mortar and pestle, then fold into the batter.

  3. Pour mixture into a mug and microwave for 3 minutes, or until a skewer comes out clean. Let cool slightly.

 

🌿 GREEN ICING (Optional but Highly Recommended!):

Whip together:

1 tsp Coconut Greens powder

¼ cup icing sugar

¼ cup whipped coconut cream

Spoon on top of the mug cake once it’s cooled slightly and garnish with extra coconut flakes. Yum.
