MINTY Hedgehog Slice
We have got you with this no bake dessert - just MELT + MIX!
This is great if you are looking to sneak in those extra veggies in the afternoon with a cuppa. Packed with antioxidants, good fats and veggies your tummy will thank you!
Ingredients
2 packets Marie biscuits or sweet plain biscuits
250g salted butter, or coconut oil melted
1/2 cup cacao powder
3 tbsp Shredded Coconut
1 tin sweetened condensed milk ( additive free )
Chocolate Icing
250g vegan dark or milk Chocolate
2 tsp coconut oil
Minty Greens icing
1/2 cup coconut cream
1 tsp mint
3 tsp @coconutgreens powder
METHOD
Step 1
Crush the biscuits in a bowl, until there is a combination of fine and chunky crumbs. Add the cacao powder and coconut, mix well.
Step 2
Melt the butter (250g salted butter, or coconut oil and sweetened condensed milk together)
Add to the dry ingredients. Place into a slice pan and refrigerate.
Step 3
Melt the chocolate icing ingredients altogether and drizzle on top of slice. Refrigerate to set.
Step 4
Add the coconut cream, mint and Coconut Greens powder to a blender mix together and add to the top of the chocolate layer to complete the mint layer then again set in the freezer for 1-2 hours !
Decorate with fresh mint & enjoy with a cuppa 😉
